Born on the Camino.

I have been dreaming of this Gin for years, how it would taste, and what its fragrances would be. In order to craft a Gin worthy of the name Camino Gin, I partnered up with Distillers David and Ben at the Big Hill Distillery near my home in Mobberley, Cheshire. Working out of a 19th-century building The pair already had the spirit of adventure running through their 130L copper still in the form of their award-winning Spirit of George gin. A gin inspired by Mobberley born George Mallory’s fateful expedition to be the first to summit Mount Everest in 1924. The compatibility could not have been more perfect and after months of discussions and botanical sourcing, I arrived with a wicker basket full to the brim of the plants, fruits, and herbs which can be foraged along the Camino Frances, and with that, the experimenting began. We added, removed, steeped, and infused until we got the smooth, herbaceous and citrusy spirit we are proud to call Camino Gin.

The Process

The carefully prepared herbs fruits and botanicals are first steeped in pure grain alcohol for 24 – 36 hours, to allow a deep flavour infusion this takes place in the copper still. A large bouquet garnet of botanicals is then placed in the neck of the copper still in order to further vapor infuse the liquid. The still is then fired up and attended to constantly throughout the process. Due to the wide array of botanicals that exist within Camino Gin, it is crucial to monitor each moment of the distillation and taste frequently as different plants, botanicals and fruits release flavour of varying levels of intensity at different stages. We only collect the heart of the batch the stage where the gin that comes of the still is at its most pure and rich with fragrance and flavour. The end result is a  wonderfully complex elevated dry gin.
